A bijou treasure that dispenses some of the most refined French cuisine in the capital. From legendary amuse-bouches & terrific breads to a wondrous ‘bookcase’ of petit fours, this is the kind of gastronomic experience you don’t forget in a hurry. Eating here is a thrilling ‘sensory journey’ full of complexity & fascination: just consider a starter of skate wing poached in beurre noisette with belly of suckling pig, sweetcorn, Roscoff onions & pickled shimeji mushrooms. After that, the kitchen broadens its palette, delivering the likes of roast Anjou pigeon breast with stuffed confit leg, braised turnip & pain d’épice crumb, before crowning it all with – say – lime mousse with rum & vanilla jelly, caramel ice cream, peppermint & chocolate crumbs. On leaving tourist-thronged Argyll Street to check into the Aqua ‘concept’, you’re greeted by a dark, sinful-looking lobby. Take the lift to the fifth floor, where, after bypassing Japanese restaurant Aqua Kyoto, you arrive at the large, glitzy dining room and terrace of the Spanish part of the operation.

The location, hybrid offering and high prices (expect to blow £80 on a tapas lunch for two, including a couple of glasses of house wine) may make diners wonder who all this is for – but the stylish presentation and panoramic views temper such misgivings.

Pan con tomate was big, rustic and bold, with the required garlicky kick. Sardines with sun-dried tomato and creamed cheese terrines were also moist and moreish. Braised cabbage wrapped in pancetta and served with morcilla sounded amazing, but didn’t quite live up to expectations. Apart from a £22 ham platter, no cold dishes were on offer during our visit – on a hot August lunchtime.

Wines range from a decent £9 glass of albariño white to high-end Riojas; the dessert menu is well stocked with small, creamy classics. Service needs some work: staff stood around with quickly-cooling dishes, looking lost, until a maitre d’ came to sort things out.

Dangerously seductive Zuma is the kind of restaurant you can fall for at the first meeting, & it continues to arouse a drooling response from readers. Here’s how. . .

We would like to offer you our free tips that we use  when preparing our cars ready for our clients, hope you enjoy

Preparation of the cars surface

Use a jet wash or hose to rinse the car, The reason we do this is to eliminate tiny particles of dirt and grime that may cause scratches if you started shampooing the car with a sponge or mitten straight away.

Wheels

Don’t use hard acid base products for wheels as this will cause corrosion and can also stain your wheels once dry.

We recommend and use Autoglym custom wheel cleaner.

If using a high powered jet wash don’t use it on the wheels as this can make your cooper grease on your brakes vanish and cause your brakes to have an annoying squeak.

Wash your wheels with a different sponge or mitten (not the one used for the body) with hot soapy water and rinse with a hose that’s not high powered.

Shampoo for the car

Use a good quality shampoo wash and wax product (Autoglym shampoo), this will help protect the cars paintwork once washed.

Use a good quality lambs wool mitten for cleaning.

If you ever drop your mitten/sponge on the floor don’t ever put it back in the container where your shampoo is  and make sure you don’t  use again. It can contain micro particles like stones that won’t be seen to the naked eye and will scratch your paintwork.

When rinsing your vehicle use a good quality wax rinse like Autoglym Auto gloss rinse and this will protect  and prepare your paintwork surface ready for your next stage.

Drying the vehicle

Use a good quality chamois leather like Autoglym Aqua dry chamois leather to  dry your vehicle, don’t worry if the whole car is not completely dry as the next stage will finish this.

Get your microfibre cloth (Autoglym Hi-tech microfibre cloth) to go over the whole car to soak up all of the last little drips and bits of water that normally congregate around your wing mirrors and bottoms of door sills.

Now your cars paintwork is dry and prepared you can now move onto the next part which is the waxing of the vehicle.

Waxing

We use Autoglym super resin polish as our wax which can be applied with a microfiber cloth in small circular motions.

Once the wax has started to dry and looks chalky you are now ready to start removing and buffing the wax off in small circular motions with a clean microfiber cloth.

Extra gloss protection

This is optional for you,  We do this step everytime our chauffeur cars are booked ready for each client.

Now use Autoglym extra gloss and apply with a microfiber cloth but just by wiping it over the paintwork and not in circular motions. This product has a water consistency and must be left to dry for 30-45 mins until it looks like a film of chalk is left on your car. After this has dried you can proceed to start to buff off in circular motions with a clean microfibre cloth turning regularly  until you get a high gloss finish on the paintwork.

Windows and Glass

Use a good quality glass cleaner like Autoglym fast glass and clean the glass inside and out of the vehicle with a microfibre cloth.

Interior

Hoover the cars floor and underneath all the seats, move the front seats right back when hoovering the front and move them completely forward when hoovering the back. Make sure to Hoover between all of the folds in the leather seats as this is where dirt and crumbs hide!

You can also use a good dashboard cleaner and protector with a microfibre cloth to keep your dashboard nice and shiny.

You can also use a soft paintbrush to brush away dust in those hard to reach areas like your air vents, ash trays, cup holders and all other areas.

Leather care

If you have leather seats an want to keep them from going shiny then you need to use Autoglym leather cleaner and Autoglym Leather care balm treatment to protect your leather from doing this and cracking. Follow instructions on the bottles for best results.

Tyre dressing

Once you have finished the hoovering you are now ready for the piece de resistance, this final stage is one of the most important stages we think as it really makes the car looked finished and ready for whatever lies ahead.
It’s the tyre dressing or tyre shine. There are several commercial dressings that you can use, we use a Autoglym instant tyre dressing that we apply with spray onto the tyre and wipe with an old sponge enabling a even coating around the tyre.

After all these steps are carried out you will have a car like a chauffeur has ready to collect their next client.

NOBU Restaurant Mayfair London

Alain Ducasse at The Dorchester
